I love coconut, whether it's in candy, cookies, smoothies, etc. I just love coconut. I was thrilled when I had the chance to review the Gold Label Virgin Coconut Oil. At first, I had no idea what this was so I had to research.
How is this oil used?
Virgin Coconut Oil is a food, and is one of the best cooking oils you can use. It has been a staple cooking oil for thousands of years in tropical climates. As a cooking oil, its chemical structure is kept in tact and therefore is resistant to mutations of fatty acid chains even when used in higher cooking temperatures, unlike most vegetable oils. Research shows that the medium chain fatty acids found in coconut oil boosts the body’s metabolism, raises body temperatures, and helps provide greater energy which can lead to weight loss. I was interested in experimenting with this oil. I used the freecoconutrecipes.com link and I made coconut oatmeal cookies! They were very delicious and the hint of coconut was there, but it was subtle; not too overwhelming. I do want to incorporate this oil into a smoothie in the near future though. The oil is solid, so you have to microwave it for a few seconds and then it is a perfect liquid. I know that this oil is great in the place of butter for cooking or used as a spread for breads (instad of jams or jellies.)

I don't use hydrogenated oils-only expeller pressed and organic oils. I would like to try coconut oil.

I like to cook and try new things and I just recently realized how using various oils can flavor different foods like sesame or chili oil can be good in spicy thai dishes. I would think coconut oil would be really good in curry or maccaroons and am interested in trying it.
