Like most adults, I don't eat veggies as much as I should.  Scarlett devours vegetables like candy on a daily basis and I wish I had her enthusiasm for them.  It's not that I dislike them, it's just I don't eat them as much as I should weekly.   Some of my favorite vegetables are raw peppers, cucumbers, broccoli and peas.  Broccoli is fabulous when it's roasted which is my ideal method of cooking it.  I think everyone needs a push to eat greens when given the opportunity.

With the veggie cakes, they look like a small cake which may intrigue children.  The cake doesn't taste like a plate of vegetables, but the taste is masked by the eggs and brown rice.  I really enjoyed the veggie cake and thought it was delicious!
